Lashmy Preps Decadent Desserts

Disney’s Riviera Resort Plant Based Dish, Fruit of the Forest

Disney’s Riviera Resort is filled with enchanting European touches and artistry in every detail – including the food! Here, Assistant Pastry Sous Chef Lashmy spends her days prepping and decorating desserts that invite guests into the heart of the French Riviera. 

Lashmy combines her passion for baking with her degree in science to create some pretty sweet concoctions, like the plant-based dessert Fruits of the Forest at Topolino’s Terrace, which is garnished with real edible flowers.

Her favorite part of the process? Seeing it all come together on the plate and sending it off for guests to enjoy. “That’s the most gratifying part, honestly – seeing peoples’ reactions when they see those baked goods and knowing they are showing up for the work we create. You can’t beat it!”

Courtney Adds a World of Flavor in Every Bite

Next stop: EPCOT! While enjoying everything this theme park has to offer, guests can sample a variety of global cuisines. For each of the theme park’s four annual festivals, cast members like Courtney plan dishes that transport guests around the world without leaving World Showcase.

As assistant sous chef for EPCOT festivals, Courtney takes pride in ensuring our dishes authentically represent each country they’re inspired by. “I love inviting our guests to enjoy something from someone else’s world plate. You can get out of your comfort zone and try something that is artful and intentional.”

Between festivals, Courtney spends time in production kitchens behind the scenes, gearing up for the next festival and empowering her cast members to bring their own culture and creativity to the plate. Roke Celebrates Culinary Exploration

Tiffins at Disney’s Animal Kingdom Theme Park

Our foodie journey continues at Tiffins at Disney’s Animal Kingdom Theme Park, where world travelers can savor flavors from African, Asian and Latin cuisines. “This restaurant is about adventure!” says Roke, a cook at Tiffins. “Here, I’ve learned about so many kinds of food.”

Roke’s love of cooking has taken him many places – from culinary school in Barcelona in his home country of Spain to the home kitchens of friends and family, and now right here to Walt Disney World.

For aspiring chefs, Roke stresses the importance of bringing a positive attitude. “The energy you put into the dish shows through to the guest. I hope it shows that I love it here – we have a nice connection, and I get to express my ideas and be present in all parts of the creation.”
