Disney Lookout Cay at Lighthouse Point is full of amazing ways to celebrate the culture of The Bahamas. While experiencing a day full of fun activities for everyone in the family and taking in the breathtaking views, you’ll probably work up an appetite.
One of the delicious treats offered at the various BBQs on the island is the Grilled Pineapple and Black Bean Salsa. And you’re in luck because the chefs from Disney Cruise Line shared the recipe with us!
This is a refreshing recipe to make on a warm day and can be served with chips as an appetizer or on top of your favorite protein. Make sure to leave extra time to let the pineapple cool before mixing the salsa. The pineapple can be grilled up to two days in advance before mixing with the other ingredients.


Grilled Pineapple and Black Bean Salsa Recipe

Serves 4-6
Grilled Pineapple and Black Bean Salsa Ingredients
- 1 pineapple, peeled and cored
- 1 green bell pepper, diced
- 1 red bell pepper, diced
- 1 jalapeño pepper, diced
- 1 avocado, peeled and diced
- 1 (15 ounce) can black beans, rinsed and drained
- 1/2 bunch cilantro, chopped
- Zest and juice of 1 lime
- 1/4 cup olive oil
- Coarse salt, to taste
- Freshly ground black pepper, to taste
Grilled Pineapple and Black Bean Salsa Instructions:
- Preheat grill to medium. Slice pineapple into 1/4-inch thick rings. Grill for 3-4 minutes on each side, until sugar begins to caramelize. Cool completely, then dice.
- Combine diced pineapple, green bell pepper, red bell pepper, jalapeño pepper, avocado, and black beans in a large bowl.
- Gently stir in cilantro, lime zest and juice, and olive oil.
- Season with salt and pepper, to taste.
